3 lbs red skinned potatoes, baked
1/2 cup butter
3 large onions, chopped
8 oz Monterey jack cheese
12 oz Velveeta cheese
Salt and pepper, to taste
Cool potatoes and cut into cubes. Place in a large baking pan. Saute onion in butter. Add to potatoes. Salt and pepper, to taste. Cube cheese and place in microwave until creamy. Be careful not to burn. Pour on top of potato mixture and bake at 350 for 25 minutes.
