1 cup canned (drained) or frozen (thawed) whole kernel corn, drained
2/3 cup chopped red onion
1/4 cup chopped fresh cilantro
3 tbsp lime juice
1 tbsp olive or vegetable oil
1 medium avocado, peeled, pitted and cut into bite-size pieces (1 cup)
1 garlic clove, finely chopped
1 can (15 oz) black beans, rinsed and drained
Mix all ingredients. Cover and refrigerate 1 hour to blend flavors. Store covered in refrigerator up to 2 days.
