1/3 cup butter, room temperature
1 cup sugar
4 egg whites
2 tsp ginger
2 tbsp lemon peel, finely grated
1 tsp baking soda
1 cup plain yogurt
2 cups flour
Preheat oven to 375. Spray muffin pan. In a large mixing bowl, beat butter and sugar until fluffy. Beat in egg whites, one at a time. Add ginger and lemon peel.
In a separate bowl, add baking soda to yogurt and stir; mixture will bubble. Fold flour into butter mixture 1/3rd at time, alternating with yogurt mixture. Blend well. Divide batter evenly in muffin pan. Bake 18-20 minutes.
