2 cups flour
1/3 cup sugar
2 tsp baking powder
1/2 tsp salt
1 (3 1/2 oz) jar salted, roasted macadamia nuts, about 1 cup
2/3 cup flaked coconut
1/2 cup chopped dried pineapple
3/4 cup milk
1/2 cup melted and cooled butter
1 egg, lightly beaten
1 tsp vanilla
Preheat oven to 400. Lightly grease muffin pans. In a bowl, combine first 4 ingredients then stir in next 3 ingredients. In another bowl, mix together remaining ingredients. Add the dry to the we mixture until just combined. Spoon batter into pans and bake 15-20 minutes.
