1 lb fresh mushrooms, sliced
1 (28 oz) can ground tomatoes
1/4 cup garlic, chopped
1 tbsp oregano
1/4 cup fresh basil, chopped
Salt and pepper to taste
1 1/2 cups water, divided
2 lbs beef tips
1/2 cup olive oil
1 tsp Salt and pepper, to taste
Place mushrooms in a microwave safe with 1/2 cup water. Cook on high for 5 minute. Rinse, drain and set aside.
In a large bowl, combine tomatoes seasonings and remaining water. Mix well and set aside.
Heat oil in a skillet and saute beef tips. Remove and place them in the bowl with the tomato mixture.
Add mushrooms to skillet and saute for a few minutes. Add mixture from bowl to the skillet. Mix well and cover over medium heat. Cook for about 20 minutes or until beef is tender. Serve over hot cooked rice. Serve 4
