2 lb fresh fish fillets
1/8 tsp thyme
1/4 tsp Cajun seasoning
1/4 cup Italian seasoned bread crumbs
1/4 cup grated Romano cheese
1/4 cup olive oil

Alfredo sauce
1/4 cup olive oil
1/4 cup fresh oregano
1 tbsp minced garlic
1/2 tbsp garlic powder
1/2 cup chopped parsley
1 bunch green onions, chopped
1/2 tbsp thyme
1/2 lb butter, cut into small pieces
2 cups tomato juice
1 tsp red pepper
1/4 tsp Cajun seasoning

Fish: Cut fish fillets into rectangular shape about 6x3 inch and lay in a 2-quart baking dish. Fillets must be no thicker than a 1/4 inch thick and lay flat. Sprinkle with seasoning, bread crumbs and cheese. Drizzle with olive oil and cover tightly with foil. Bake at 375 for 45 minutes. Remove from oven and drain off liquid. Pour Alfredo sauce over fish and serve.

Sauce: Saute first 6 ingredients in the oil for 5 minutes over medium-high heat. Lower temperature to medium and incorporate butter. Add remaining ingredients and simmer for 10 minutes. Serves 6-8
