3 dozen purchased sugar cookies
Filling:
1 tsp powdered sugar
1(8-oz.)package cream cheese, softened
1 tsp almond extract or Amaretto(or vanilla or peppermint flavoring)
1/4 cup finely chopped almonds(or 1/4 cup toffee bits)
Glaze:
1-1/2 cups powdered sugar
1/8 cup water
1 tbsp light corn syrup and melted butter
1/4 tsp almond extract
1 or 2 drops red food coloring, if desired
In a small bowl, combine all filling ingredients and mix well. Spread about 1 tablespoon filling on bottom of cookie. Top with another cookie, bottom side down, to form a sandwich. Repeat with remaining cookies.
In a large bowl, combine all glaze ingredients and blend at low speed until blended. Beat at high speed until smooth. Add 1 to 2 tablespoons additional water if glaze is too thick.
Spoon or brush the glaze evenly over the tops of the sandwich cookies. Let stand until glaze is set. Decorate as desired with maraschino cherries, sugar sprinkles, nuts, candies, or gel. Store in refrigerator. Makes 18 sandwich cookies.
