3/4 cup apple cider vinegar
1 1/2 tbsp minced fresh ginger and garlic
1 1/4 cups dark brown sugar
1 (46 oz) can pineapple juice
1 1/2 cups soy sauce
4 (14-16 oz) rib-eye steaks

In a heavy saucepan, combine first 3 ingredients and heat until lightly simmering. Add brow sugar, about 1/4 cup at a time, completely dissolving the sugar before adding more. Pour liquid into a large enough container that will later hold the steaks. Add the pineapple juice and soy sauce to the mixture, whisking thoroughly until all ingredients are well-incorporated. Refrigerate until cold.

When the marinade has chilled, add the steaks to the container and push them down so they are covered in the marinade. Cover the container and place in the refrigerator at least 4 days, turning each day.

When steaks are ready, turn grill to high and allow to get very hot. Reduce heat to medium-high. Drain steaks from marinade and grill to desired doneness, about 4-6 minutes per side for medium rare. Serves 10
