Cookie
1/2 cup butter or butter flavored shortening
1 (8 oz) pkg cream cheese, softened
1/4 cup milk
1/4 cup packed brown sugar
3/4 cup apricot, peach or pineapple preserves
1 1/4 cups flour
2 tsp baking powder
1 1/2 tsp cinnamon
1/4 tsp salt
1/2 cup finely chopped pecans or flaked coconut

Frosting
1 cup confectioners sugar
1/4 cup apricot, peach or pineapple preserves
1 tbsp butter flavored shortening
1/4 cup flaked coconut (optional)

Preheat oven to 350. Grease baking sheet lightly with some shortening. Cream together first 5 ingredients until blended. Combine the dry ingredients and add to creamed mixture, beating on low until smooth. Stir in nuts or coconut. Drop dough by heaping spoonfuls onto greased baking sheet, leaving room to spread. Bake for 12-15 minutes or until golden. Cool completely.

To make the frosting, combine the confectioners sugar, remaining apricot preserves and 1 tbsp shortening; mix well. Frost cooled cookies and sprinkle with coconut if desired.
