3 lbs any firm fish fillets
3 tbsp olive oil
2 egg yolks, beaten
1 cup melted butter
2 tbsp lemon juice
1 cup cooked shrimp, peeled, deveined and chopped
1/2 cup cooked crabmeat and sliced mushrooms
Paprika, salt and pepper, to taste
Season fish with salt and pepper in a baking pan and sprinkle with olive oil. Bake at 375 for 30 minutes. As fish bakes, prepare sauce.
Sauce: Place yolks in top of a double boiler over hot, not boiling water and gradually add butter, stirring constantly, until mixture thickens. Add remaining ingredients and season to taste. Stir and cook about 10 minutes to heat thoroughly. Place baked fish on a platter and serve with sauce. Serves 6
