1 (2 lb) pkg dried pinto beans
8 slices bacon, chopped
2 cloves garlic, minced
2 tsp salt
1 tsp crushed red pepper
3 cups chopped onions
2 16 oz cans stewed tomatoes
3 tbsp plus 1 tsp chili powder
1 tsp cumin and marjoram
Salt to taste
Sort and rinse beans. Soak beans in enough water to cover in bowl for 8 hours or longer; drain. Combine beans with enough water to cover in saucepan. Stir in bacon, garlic, salt and red pepper. Cook, covered for 1 1/2 hours or until beans are tender. Saute onions in nonstick skillet. Add undrained tomatoes, chili powder, cumin, marjoram and salt; mix well. Simmer for 45 minutes, stirring occasionally. Add to bean mixture; mix well. Simmer for 20 minutes longer, stirring occasionally. Serves 8
