1 slab ribs, cut into 2-rib portions
1/2 cup flour
1/4 cup oil
1 onion, bell pepper and carrot, chopped
1 tsp minced garlic
2 bay leaves
2 tsp salt
1 cup dry red wine
1 (28 oz) can crushed tomatoes
1 (6 oz) can tomato paste
1 quart water
1 tsp creole seasoning
Season flour with salt and pepper. Heat the oil in a heavy pan. Dredge the ribs in the flour and brown them in the oil, a few pieces at a time. Remove the ribs as they brown and then add the chopped vegetables and saute. Stir in the next 6 ingredients and simmer for a few minutes.
In a Dutch oven, place sauteed vegetable mixture and add the remaining ingredients. Submerge the ribs in the mixture. Cover and bake at 300 for 2-3 hours. Serves 4
