Carrot-Apple Smoothie

- 1 1/2 cup peeled and sliced carrots
- 3/4 cup water
- 1 1/2 cup apple juice
- ice cubes
Combine the carrots and water in a saucepan over medium-high heat. Bring to a boil and let the carrots cook until soft (do not overcook), about 10 minutes. Drain the carrots and let cool. Combine the cooled carrots and apple juice in a blender. Puree on high speed. Add ice cubes as desired and process until the smoothie is the consistency you want (add more ice cubes if needed). Serve immediately.
