CDKitchen's Best Hamburger or Hot Dog Buns

- 1 cup warm water
- 2 tablespoons shortening (or butter)
- 2 tablespoons sugar
- 2 teaspoons salt
- 3 cups bread flour
- 3 tablespoons dry milk powder
- 2 1/2 teaspoons active dry yeast
- OR
- 1 1/2 teaspoon fast rise yeast (bread machine)
Add all ingredients to pan in order suggested machine manufacturer. Select \"Dough/Manual\" bread setting. When cycle is complete, remove dough to a lightly floured surface. Cover and let rest 10 minutes. Divide dough into 8 equal pieces. Form each piece into smooth ball. Place on large greased baking sheet. Hamburger Buns: Flatten balls into 4-inch rounds; cover. Hot Dog Buns: Gently roll balls into a 6-inch rope; cover. Let rise in warm, draft-free place until doubled in size, 20 to 30 minutes. Lightly beat egg white and 1 tablespoon water. Brush on buns. Sprinkle with sesame seed if desired. Bake at 375 degrees F for 12 to 15 minutes or until done. Makes 8 buns. You can easily make these smaller for dinner rolls or for whatever size you need. This is a delicious, moist bun. For a really soft crust, skip the egg white and brush the tops of the buns with milk 3/4ths of the way thru baking.
