- 2 tablespoons whole mustard seed
- 1 tablespoon whole allspice
- 2 teaspoons black peppercorns
- 2 teaspoons whole cloves
- 1 teaspoon ground ginger
- 1 teaspoon hot crushed red pepper flakes
- 2 small bay leaves, crushed
- 1 piece (2 inch size) cinnamon stick, broken in pieces
- 1 teaspoon ground cardamom
Combine all the spices and mix well. Store in an airtight jar for up to 6 months. You can adjust the ingredients as needed. Use wherever pickling spice is called for in recipes.
