Serves/Makes: 2.66 cups
Ready in: < 30 minutes
- 2 cups dry bread crumbs
- 1/4 cup all-purpose flour
- 3 tablespoons paprika
- 4 teaspoons salt
- 2 teaspoons sugar
- 2 teaspoons onion powder
- 2 teaspoons ground oregano
- 1 teaspoon cayenne pepper
- 1/2 teaspoon garlic powder
- 1/4 cup solid shortening
Combine the bread crumbs, flour, paprika, salt, sugar, onion powder, oregano, cayenne, and garlic powder in a bowl. Mix well. Add the shortening and cut into the dry mixture using a pastry blender or two forks. Mix until the breading is crumbly. Transfer to an airtight container and keep for up to 2 months. To use the breading mix: Dip pieces of chicken or pork into milk, letting any excess drip off. Dredge in the breading mix. Place in a shallow baking dish and bake at 400 degrees F for 50-60 minutes or until the chicken or pork is cooked through and the breading is golden brown.
