Pepsi Ribs

- 4 pounds country style ribs
- 1 medium sliced onion
- salt and pepper (to taste)
- 4 cups Pepsi cola
- 2 cups barbecue sauce
Preheat oven to 450 degrees F. Place the ribs in a single layer in a baking dish. Top with the onion slices and sprinkle liberally with salt and pepper. Place the ribs in the oven and bake for 30 minutes. Reduce the heat to 350 degrees F. Carefully add the Pepsi to the baking dish, making sure not to wash the seasonings off the ribs. Cover with foil and bake for one more hour, or until the ribs are tender. Remove the ribs from the liquid and place on a cutting board. Generously brush barbecue sauce on all sides of the ribs. Serve immediately with additional barbecue sauce if desired.
