Deep Fried Buttermilk Battered Onion Rings

- 3 cups buttermilk
- 1 1/2 teaspoon baking soda
- salt and pepper, to taste
- 6 medium Vidalia onions sliced 1/4 inch thick and separated into rings
- oil, for frying
- 4 cups all-purpose flour
Combine the buttermilk, baking soda, salt, and pepper in a deep bowl. Add the sliced onions to the buttermilk mixture and cover with plastic wrap. Set aside for 2 hours at room temperature. Heat the oil in a deep fryer to 375 degrees F. Place the flour in a shallow dish. Remove several onion rings from the buttermilk without letting a lot of the liquid drip off. Immediately put it into the flour and turn to coat the onion rings in the flour. Transfer the onion rings to the hot oil and cook for 6 minutes, turning the onion rings as needed until golden brown. Remove the onion rings from the oil and let drain on paper toweling. Sprinkle lightly with salt and repeat the process for the remaining onion rings. Serve the deep-fried buttermilk battered onion rings with ketchup or ranch dressing (or your favorite dipping sauce).
