Ingredients:

1 tablespoon vegetable oil
1 red onion, chopped
salt
1 teaspoon turmeric
1 cup coconut milk
½ cup chicken stock
9 ounces of chicken breast, sliced into thin strips
¼ cup canned tomatoes
8 broccoli florets
1 tablespoon curry paste
1 tablespoon dried basil

How to Cook Chicken and Broccoli Curry

Heat the vegetable oil in a skillet over medium heat.
Add the red onion and cook it until it softens. Season with salt and turmeric.
Pour the coconut milk and half of the chicken stock.
Add the chicken and coat it with the coconut milk. Add the canned tomatoes and give everything a good stir.
Add the remaining chicken stock and broccoli, and simmer everything for 15 more minutes.


This is the wet version of Chicken Curry with Onions & Broccoli, made with coconut milk and chicken stock. I prefer the "dry" version of it. You can do this as a "dry" (without coconut milk & chicken stock) as a stir fry with 2 table spoons of butter and 2 table spoons of sesame oil to saute the sliced onion and cubed chicken breasts. As you stir fry the chicken and onions, you add about 1/4 to 1/3 cup of curry powder and seasoning salt to taste. You then add the broccoli florets and finish cooking and serve over cooked rice. Better yet, you can add the rice to the skillet to fully absorb the sauce and curry the rice. You can use a yellow onion, instead of a red onion, and as much or as little broccoli as you like. I like the dish with a lot of broccoli. Ingredients are about 1 lb. of cubed chicken breast, one larges sliced onion, and 1 1/2 to 2 cups of broccoli florets. Everything is cooked over medium heat on a stove top. If things look to dry, add more butter. Indian cooking uses a lot of clarified butter and it really improves the flavor.

You can also make the above dish with shrimp and make a shrimp curry.
