Cake Mix Banana Bread

- 4 bananas
- 1 box (18.25 ounce size) yellow cake mix
- 3 eggs, beaten
- 1/3 cup oil, or applesauce
- 1 cup chopped nuts
Preheat oven to 350 degrees F. Grease and flour 2 loaf pans. Mash the bananas in a large bowl. Add the cake mix, eggs, and oil and beat together with a mixer on low speed. Stir in the nuts by hand. Pour the batter into the prepared pans and bake at 350 degrees F for 30-35 minutes. Remove from oven and let cool in pan for 10 minutes then remove the bread to a wire rack to cool completely. Store the banana bread in an airtight container at room temperature for up to 5 days (or freeze for up to 2 months). Cook's Notes: You can also bake this in a Bundt pan at 350 degrees F for 45 minutes.
