  • 4 cups prepared mashed potatoes, warm (not hot)
  • 1/4 cup melted and slightly cooled butter
  • 2 egg yolks, beaten
  • 1 teaspoon Dijon mustard
  • salt and white pepper, to taste

Preheat the oven to 400 degrees F. Grease a baking sheet.

Combine the warm mashed potatoes, melted butter, egg yolks, mustard, salt, and white pepper in a bowl. Stir to combine the ingredients but do not overmix or the potatoes will not retain their shape.

Using a spoon or pastry bag, mound the potato mixture on the greased baking sheet leaving room between the mounds to allow for spreading.

Place the baking sheet in the oven and bake at 400 degrees F for 15 minutes or until the potatoes are light golden brown.

Remove the baking sheet from the oven and carefully remove the duchess potatoes from the baking sheet with a spatula. Serve immediately.
