Fat Ronnie's Fried Onions

- 2 cups all-purpose flour
- 1 1/2 teaspoon salt
- 1 teaspoon ground black pepper
- 1/2 teaspoon baking powder
- 1 cup buttermilk
- 1 large sweet onion, like vidalia or walla walla, sliced 1/2" wide
- vegetable oil, for deep-frying
Combine the flour, salt, pepper, and baking powder in a shallow dish and mix until well blended. Place the buttermilk in another bowl. Heat oil in a deep fryer to 375 degrees F. When the oil is hot, dredge the onion rings in the flour then dip in the buttermilk, then in the flour again. Place the onion rings, a few at a time, in the deep fryer and cook until golden brown (2-3 minutes). Remove from the oil and drain on paper towels or brown paper. Repeat with remaining onion rings. Serve the fried onions hot with ketchup or other dipping sauce.
