Put cabbage,carrot,some onion,ginger,garlic & chillies to taste into a pan with a glug of oil and cook until onion is soft and veg is al dente. Add Turmeric & Garam Masala (or any combination of indian spices you prefer) combine and add tomatoes, transfer to a mixing bowl and using a stick blender or in a food processor whiz to a coarse paste. Fry remaining onion and lardons in a deep pan, add prepped paste and combine. Add water until you get a thick sauce. Add peeled hard boiled eggs and leave to rest for a while. Serve with Coconut boiled rice and indian chutney.
