3 Tbsp bacon fat or butter
1 medium sweet onion, diced
1 red or green bell pepper, diced
6 to 7 cups fresh corn kernels, or frozen
1 (14-ounce) can diced tomatoes, drained or 1 cup fresh diced tomatoes
1 tsp sugar
1/2 tsp garlic powder
1/2 tsp black pepper
1/4 tsp cayenne pepper
1 bay leaf
1 chicken bouillon cube
1/2 cup water
1/2 cup heavy cream


1. Heat bacon grease or butter over medium-high heat in a large skillet, cast iron is best.
2. Add onion and bell pepper and cook, stirring frequently, for 5 minutes.
3. Add corn, diced tomatoes and cook for 3 minutes.
4. Add remaining ingredients and simmer for 10 minutes, stirring frequently.
5. Check for seasoning and add salt if needed. Discard bay leaf.
