1 lb smoked sausage, sliced
1/2 red bell pepper, seeded and chopped
1/2 green bell pepper, seeded and chopped
1/2 medium yellow onion, thinly sliced
1/2 lb Fresh okra, sliced
1 clove garlic, minced
1/3 cup celery, sliced
9 cups tortilla chips
2 Tbsp olive oil
1/2 lb fresh shrimp, deveined and cleaned
3 tsp Creole seasonings, divided
1 (8 oz) shredded colby-jack cheese blend
1/3 cup fresh parsley leaves
1/2 cup sour cream


1. Preheat oven to 400 degrees. Line a large rimmed baking sheet with parchment paper.
2. In a large skillet, cook sausage over med-high heat, stirring frequently, until browned about 5 minutes.
3. Add bell pepper and onion, cook, stirring frequently, until onion is softened about 5 minutes.
4. Add okra and garlic, cook for 2 minutes. Removed from heat and stir in celery.
5. Arranged chips on prepared pan, and add sausage mixture.
6. Wipe skillet clean and add oil.
7. Toss shrimp with 1 tsp creole seasoning. Add shrimp to skillet and cook for 3-5 minutes. Place shrimp on top of nachos and sprinkle with cheese.
8. Bake until cheese is melted, 3-5 minutes. Sprinkle with parsley.
9. In a small bowl, combine sour cream and remaining 2 tsp creole seasoning. Serve over hot nachos.
