CAKE
4 cups cake flour
2 3/4 cups sugar
2 tsp baking powder
2 tsp soda
Pinch of salt
1 cup butter, softened
1 cup buttermilk
2 cups banana, mashed
1 1/2 tsp vanilla
3 eggs
FILLING
3 large bananas
3/4 cup sugar
1/2 block butter
corn starch to thicken
1. For cake, sift flour, sugar, baking powder, soda and salt: Add butter, 1/2 milk, bananas and vanilla.
2. Beat 2 minutes, add eggs, other 1/2 milk and beat for 2 more minutes.
3. Pour into 3 prepared 10" cake pans and bake at 350 degrees for about 45 minutes or until toothpick comes out of center clean.
4. For filling, mash the 3 large bananas, add sugar and butter.
5. Cook on low to medium heat until mixture boils.
6. Cook for about 4 minutes then thicken with cornstarch.
7. Spread the filling between layers and frost with favorite frosting.
