1 tbsp reduced-calorie margarine
2 medium onion, sliced
3 medium yukon gold potato, unpeeled and cut into 1-inch cubes
14 1⁄2 oz can reduced-sodium chicken broth
1⁄2 tsp fresh thyme, minced (I use 1/8 tsp dried)
1⁄4 tsp salt
1⁄4 tsp black pepper



1. Melt margarine in a large skillet over medium heat; add onion, and cook 20 minutes or until golden, stirring often.
2. Add potato and remaining ingredients; cover, reduce heat, and simmer 30 minutes.
3. Uncover, increase heat to high, and simmer 3 to 5 additional minutes or until liquid is absorbed.
