5 lbs ground sirloin
1 lb ground Italian sausage
2 Tbsp salt
2 Tbsp black pepper
2 large onions, diced
1/4 cup garlic, minced
1/4 cup Spanish paprika
1/2 cup chili powder
2 Tbsp cayenne pepper, ground
2 Tbsp sugar
1 Tbsp ground cumin
2 Tbsp parsley flakes
1/4 cup Worcestershire sauce
4 (15 oz) cans diced tomatoes
1 (15.5 oz) can tomatoes and green chilies
4 cups grated mild cheddar cheese


1. In a large bowl, mix ground sirloin and Italian sausage. Put mix in large skillet over medium heat.
2. While meats are cooking add 1 Tbsp of salt and 1 Tbsp of pepper, mixing into meat.
3. Add onions and garlic to meat, stirring occasionally.
4. When meat is cooked, drain off fat and put meat in a 8-quart pot on medium heat.
5. Add all other ingredients except cheese and bring to a boil for about 10 minutes.
6. Reduce heat, cover and low simmer for 30 plus minutes.
7. Serve hot in bowls topped with cheese, crackers, mustard or any garnish to your liking.
