Eyeball Cookies

- 1/2 cup butter, softened
- 1 1/2 cup peanut butter
- 1 pound powdered sugar
- 1 tablespoon vanilla extract
- 12 ounces white almond bark
Combine the butter and peanut butter in a mixing bowl and beat on medium speed until creamy and uniform in color. With the mixer running, slowly add the powdered sugar and vanilla. Mix until combined. Shape the cookie dough into 1-inch balls and place on a wax paper lined tray or plate. Place the tray in the refrigerator and chill for 30 minutes. Break up the white almond bark and place in a microwave-safe bowl. Microwave for 60 seconds then stir. Microwave, stirring every 15 seconds, until the candy is melted and smooth. Using a toothpick to hold the cookies, dip each "eyeball" into the melted candy coating leaving a small circle uncoated on the top (for the pupil). Place the dipped cookies on waxed paper and let dry. Store the cookies in an airtight container.
