1 pound turnips, peeled and chopped in 1" cubes
1 cup mayo or mayo substitute (I like Spin Blend or Miracle Whip)
2 tablespoons lemon juice
2 tablespoons pickle juice
1 tablespoon sugar
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon celery seed
1 tablespoon curry powder
1 medium yellow onion, diced
1 large celery stalk, diced
1 large radish, chopped to match the size of the onions and celery
2 hard boiled eggs, chopped
Directions:
Put turnips in a pan of water and bring to a boil. When it starts to boil, let it cook for about 20 minutes or until fork tender. Drain and run under cold water to chill.
In the meantime, mix the rest of the ingredients in a medium bowl and whisk together well.
Put chilled turnips on a towel to release most of the moisture.
Put them in a bowl and pour the sauce over the top, and stir well. Place in refrigerator for at least 6 hours to allow all the flavors to permeate the turnips. Stir again after about 3 hours.

Faux Potato Salad
This "faux" potato salad is made with turnips instead of potatoes.
