3/4 pound of leftover cheeseburgers (I used turkey burgers)
1 tablespoon oil
1/3 cup celery, diced
1/2 cup yellow onion, diced
1/2 cup diced carrots
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon fresh chopped basil
1 teaspoon fresh finely chopped rosemary
1/4 teaspoon dried oregano
3/4 cup mashed potatoes, thick, not runny
1/2 cup beef broth (or less)
2 pie crusts (homemade or store bought)
1 egg yolk
Step 1 Preheat oven to 375° F.
Step 2 In a bowl, break up the cheeseburgers in small pieces.
Step 3 In a large skillet, heat oil on medium heat. Add celery, onion and carrots. Sauté till softened. Add garlic and cook another 30 seconds.
Step 4 Add salt, pepper, basil, rosemary, and oregano. Stir and cook 2 minutes to let flavors bloom.
Step 5 Add crumbled cheeseburgers and mix with veggies. Add mashed potatoes and mix in well. Add as much beef broth just to make it moist, not runny. Heat on low, covered, till hot, stirring occasionally.
Step 6 In an 8" pie pan, place one pie crust. Add filling, and top with the other pie crust. Seal the edges with the bottom pie crust and flute the edges or seal with the tines of a fork. Pierce the top pie crust several places with a fork. Brush the top with the egg yolk that has been beaten and a very little water added.
Step 7 Place in preheated 375°F oven for 45-50 minutes, or until top crust is lightly browned.
