Shortbread:
2 1/2 Cups AP Flour
1/2 Cup Sugar
3/4 Tsp Salt
16 TB Melted Butter ( 2 Sticks)

Preheat oven to 350°
Prepare a foil sling in a 9 / 13 inch Baking pan.
Whisk together Flour, Sugar, and Salt
Mix Melted Butter into dry ingredients
Place into sling-ed pan and prick all over with a fork
Bake for 25 - 30 minutes until slightly browned
Compact top with a spatula (use a towel as it will be very hot)
Cool for 20 minutes

Caramel:
14 oz Can Sweetened Condensed Milk
7 oz (1 Cup) Brown Sugar
1/2 Cup Corn Syrup
8 TB Butter ( 1 stick)
1/2 Tsp Salt
1/2 Cup Heavy Cream

Place ingredients in sauce pan and cook over medium heat stirring occassionly until temp is 236° - 239°
16 - 20 Minutes
Spread over shortbread while still hot and cool for 1 1/2 hours

Chocolate Topping:
6 oz Bittersweet Chocolate
2 oz Grated Bittersweet Chocolate

Melt 6 oz Chocolate in bowl in microwave 1 - 2 minutes at 50% power
Mix in grated chocolate and stir to melt
Place on top of Caramel layer

Refrigerate until Chocolate sets ( about 10 - 15 minutes)
Cut in half width wise and then rotate and cut each half in half width wise.
Cut each quarter into 5 slices width wise
