Armstrong's Cheese Sauce

- 2 tablespoons butter
- 2 tablespoons flour
- 1 1/4 cup warmed milk
- 3/4 cup freshly grated sharp Cheddar cheese, more if desired
- salt, to taste
- cayenne pepper, to taste
Melt the butter in a saucepan over medium heat. Stir in the flour and cook, stirring constantly, until smooth and bubbly. Do not let the flour mixture brown. While stirring, slowly add the hot milk and continue to stir the sauce until it thickens. Stir in the cheese and continue to stir until the cheese is melted. Stir in salt and cayenne as desired. Serve the cheese sauce immediately or store in an airtight container in the refrigerator. Reheat the sauce gently or it may separate.
