Aldi Chili

- 1 pound ground sirloin (lean) or your choice of shredded meat
- 2 cans Mexican Beans drained and rinsed for less sodium
- 1 package roma tomatoes (remove seeds)
- 1/2 yellow onion
- 1 red bell pepper
- 1 green bell pepper
- 1/2 clove garlic or garlic powder to taste
- 1 teaspoon ground coriander
- 1 teaspoon ground or fresh cinnamon
- 1 teaspoon cayenne pepper
- 1 teaspoon black pepper
- 2 teaspoons chili powder
- 2 teaspoons cocoa powder
- 1/2 cup honey or brown sugar or to taste (depends on taste of tomato and individual tastes)
- 1 teaspoon salt
- 1 teaspoon bay leaves
- 1 teaspoon dried cilantro
- 1/4 teaspoon marjoram
- 1/4 teaspoon basil
- 1/4 teaspoon celery salt
- 1/4 cup chardonnay or other sweet wine
Seed tomatoes and peppers and puree together with sliced onion (skin removed of course) and add to crock pot. Add wine and all spices except for sweetener and salt. Let cook for an hour or so. Brown meat and drain (you can also cook meat with onions and garlic instead of processing them for a less garden flavored chili, but if you do this add the meat right away). Add meat and taste chili. Let cook on low for another 2-3 hours. Add sweetener now as tomatoes tend to get sweeter when cooked and add salt to taste. Cook's Notes: This chili is quite different from anything i have tasted. Selection of fresh produce is essential. Wine is optional and a package of chili mix can be substituted for chili powder, cayenne, and cocoa powder. Most of this stuff can be purchased at Aldi and Jewel.
