3/4 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
3/4 cup whole milk
2 tablespoons butter
1 egg yolk
1 teaspoon vanilla
1 egg white

Preparation:
Sift flour, baking powder, and salt into a medium bowl. In small saucepan, combine milk and butter; heat just until butter melts. Pour into small bowl and beat in egg yolk, milk and vanilla.(Make sure it is not too hot to cook egg


In another small bowl, beat egg white until stiff peaks form. Stir the egg yolk mixture into the dry ingredients just until barely combined, then fold in the egg white. Be careful not to overmix.

Have a griddle heating while you're beating the egg whites. Grease with a tiny bit of solid shortening. Put about 1/4 cup on the hot griddle. Or make smaller, if you wish.
Cook until edges look dry and bubbles form . Flip over and cook on other side until lightly browned. Serve immediately.
Makes about 6-8

The kids, when they are here, like chocolate chips in them. I like milk chocolate best. Becca always eats hers with peanut butter.
