1 1/2 cups unsalted butter

3/4 cup powdered sugar (confectioners)

1/4 teaspoon salt

1 1/2 cups finely ground almonds

2 1/2 teaspoons real vanilla extract

1 teaspoon almond extract

3 cups sifted all-purpose flour

1/3 cup powdered sugar for rolling

Preheat oven to 325 degrees F

Cream butter in a bowl,

gradually add powdered sugar and salt.
Beat until light and fluffy.

Add almonda, vanilla and almond extract

Blend in flour gradually and mix well.

Shape into cresents (or balls) using about 1 teaspoon for each cookie. Place on ungreased cookie sheets,( I use parchment paper) and bake for 15-20 min. adjust time according to your oven.
Important..Do not brown.

Cool slightly, then roll in the extra powdered sugar. See Note:


** Note: I like to roll in powdered sugar while hot and then roll again when slightly cooled.
If you make cresents, sometimes they are hard to roll, so try sifting some powdered sugar over them.
