Ingredients:
1 tablespoon olive oil plus 1 teaspoon olive oil.
1 pounds 4 oz of potatoes, boiled, peeled and sliced 1/4" thick.
1/2 teaspoon salt
1/4 teaspoon dried marjoram leaves
1/4 teaspoon black pepper
1 cup thinly sliced onions
2 cloves of garlic, smashed
1/4 cup low sodium chicken broth
In a large nonstick skillet, heat 1 tablespoon oil over medium high heat..Add the potatoes. Sprinkle with salt, marjoram and pepper.
Cook turning as they brown..About 10 minutes.
Meanwhile, in another skillet, heat remaining teaspoon of oil over medium heat and add onions. Cook 3-4 minutes. Lower heat and add garlic and cook about 2 minutes. Add the broth and cook 5-7 minutes longer until onions are soft.
Add to potatoes and toss together.
