Preheat Oven 425 degrees

Ingredients:

1 9" unbaked pie shell
1/4 cup butter
1/2 cup brown sugar
1 1/2 cups mashed sweet potatoes (can used canned sweet potatoes and drain them)
3 eggs
1/3 cup light corn syrup
1/3 cup evaporated milk (like Pet, Milnot, etc.)
1 teaspoon vanilla
1/2 teaspoon orange zest.
1/2 teaspoon cinnamon
a pinch of nutmeg (optional)

Mix the butter, brown sugar until well blended.

Add the mashed sweet potatoes, 3 eggs, mix well

Add the corn syrup, milk, vanilla, orange zest, and cinnamon.

Pour into the pie shell and bake 10 minutes at 425 degrees.
Lower the oven heat to 325 and bake 40 more minutes. A knife inserted in middle should come out clean.

(The pie will poof up while cooking and then sink down some when cooled.)
