Serves/Makes: 1.25 cups
Ready in: 30-60 minutes

  • 1 shallot, minced
  • 2 cloves garlic, minced
  • 1 teaspoon cayenne pepper
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1 teaspoon red pepper flakes
  • 1 1/2 teaspoon cumin
  • 1 tablespoon fresh oregano
  • 1/2 teaspoon coarse salt
  • 1 1/2 cup olive oil

Combine all ingredients in a heavy saucepan. Simmer over very low heat for about 10 minutes, or until flavors are extracted from ingredients.

Be careful not to let spices burn. Store refrigerated without straining, and strain as needed.
