Old Fashioned Shepherd's Pie

- 1 pound ground beef
- 1 medium onion, chopped
- 1 clove garlic, chopped
- salt and pepper to taste
- 1/2 teaspoon dried thyme
- 1/4 cup beef gravy
- 2 cups corn (canned or frozen), peas or mixed vegetables
- 3 cups prepared, seasoned mashed potatoes
- 2 tablespoons cold butter, cut in small bits
- paprika to taste
Preheat the oven to 300 degrees F. In a deep, oven-proof skillet, brown the ground beef, onion, and garlic over medium-high heat. Cook, stirring frequently, until the beef is cooked. Drain off any excess grease. Add the salt, pepper, thyme, and gravy to the skillet and mix well. Spread the corn over the beef mixture. Spread the mashed potatoes over the top of the corn. Use a fork to form a decorative pattern in the mashed potatoes, if desired. Dot the top of the mashed potatoes with the butter and sprinkle with paprika. Place the shepherd's pie in the oven and bake at 300 degrees F for 1 hour or until the potatoes are browned. Remove the skillet from the oven. Serve the shepherd's pie hot.
