4 cups boiled red potatoes, water drained
off
1 cup chopped onion ( I like to use a red onion but any kind will do)
4 eggs, boiled,shelled and chopped
1/2 cup sweet relish
1 cup light mayo
Mix all ingredients together and season with salt and pepper. Top with paprika if you like!
