Inspired by a recipe in an old Days of our Lives cookbook.
1 package pasta, any style (servings for 8)
3 avocados
1 8-oz package cream cheese at room temperature
1 4-oz can mild green chilies
1/4 cup minced onion
2 Tablespoons minced garlic cloves
Prepare the pasta as directed, plus a few minutes more to create a slightly-softer-than-al-dante pasta. Drain and rinse. Toss with a teaspoon of olive oil if desired. Set aside.
Peel and seed the avocados, then mash very well. Blend with cream cheese, then add chilies, onion, and garlic. Gently fold into the pasta and serve immediately.
Note that if this is served quickly there is no need to add citrus to prevent browning, and the citrus will change the taste.
Sere as a side or a vegan entree.
