Authentic Guacamole

Makes about 2 cups
Serving size: 1/2 cup

3-4 ripe avocados, peeled and seeded
2 buds garlic, very finely minced
1 teaspoon salt, I use kosher sea salt
IF it is not as creamy as you like, add 1 tablespoon soft cream cheese

Mash all the above together, blending until smooth.

To serve as salad:

Place 1 cup shredded iceberg lettuce on a chilled salad plate. Top with a spoonful of guacamole, about 1/2 cup. Top with tiny diced Roma tomato, green onion, and tomatillo, as desired. Garnish with a dollop of sour cream or Mexican creme, and a black olive.

May be served with or without tortilla chips.

To save guacamole: Place in a well-fitted low-sided bowl. Cover with plastic wrap, making sure to press tightly on the guacamole so no air gets in. Place in the refrigerator. When it's time to serve, remove the plastic wrap, which will remove any discoloration that's formed. Then stir and serve.

I have not tried to save this for more than a day, but for the one day this works very nicely.
