At least 8 flour tortillas, whole wheat
1 lb grated cheese, Monterey Jack works well
1 sm. can chopped mild green chilies
Cooked meat, if desired… chicken or chili is good
Butter or lard for frying (Do not use shortening)
Layer enough cheese, chilies, and meat atop one tortilla to cover it well but not thickly. Top with second tortilla. Cut into halves or fourths, as you prefer. Fry in hot skillet or griddle on both sides in enough butter to prevent sticking. Serve with salsa, sour cream, & guacamole.
These can be made with low-carb tortillas and are surprisingly tasty. Also, try smoked Gouda or white cheddar cheese for variety.
