2 or 3 Large Onions, sliced into 1/2” rings

Mix together in bowl to form batter:
2 cups flour
1 cup cornmeal
Pinch salt
Enough melted vanilla ice cream to thin – Should be about the consistency of pancake batter.

Dip divided rings of onion into the batter one at a time and fry in hot oil until golden brown. A deep-fryer works best, but you can use a saucepan filled just to half-way with oil to achieve the same effect.

Drain on paper towels and serve immediately.
