It's really a sandwich filling, but...
About 2.5 pounds precooked ham
4 – 6 hardboiled eggs
1 cup mayonnaise
1 Tablespoon prepared mustard
1/4 to 1/2 cup onion, chopped very fine
1/2 cup finely chopped bell pepper, any color or mixed
1/2 cup finely chopped celery
Mix the mayonnaise and mustard in the bottom of an adequately-sized salad bowl. Add chopped onion, bell pepper, celery. Peel and dice eggs, add to bowl, stirring between each addition. Chop ham into 1-inch cubes or smaller, add last and stir very well to mix. Chill. Serve cold, either as sandwich filler or on a few lettuce leaves. If you’re serving it as a salad, add a small handful of chopped nuts for texture.
Note: This recipe works well with cubed baked chicken, turkey, fish, or even roast beef.
