Supposedly the way it's made in Mexico...
3 very ripe avocados, peeled, cored, and mashed
1 generous teaspoon garlic powder
1 - 2 Tablespoons taco sauce (Optional)
Salt to taste (go easy, adding a pinch at a time until it's as you like it.)
Blend together well and serve with tortilla chips.
NOTE: to save leftovers or for make-ahead, you can put the guacamole in a wide bowl and press plastic wrap against the top of the guacamole, sealing out as much air as possible to prevent browning. When you peel off the plastic wrap, the very thin layer of brownish guacamole on top comes with it. Then simply stir and serve.
NOTE: Do not use lime or lemon to prevent browning. It does effect the flavor, and it tends to leave a tart or bitter aftertaste.

Guacamole
Guacamole is a salad, but you can use it as a dip or a topping just as well. For an authentic salad, serve it on a bed of Romaine lettuce and top with diced tomatoes and tomatillos, and maybe a dollop of sour cream.
