I mention to not be afraid to try different fruits... Well, yesterday I made one with freshly cooked pineapple from the produce section and added a little coconut to the topping... We were all extremely pleased with the outcome.

Pie Filling for Two Pies - your choice of flavor, homemade or from a can (Apple and Cherry are probably most common, but don't be afraid to try something different)

Pour pie filling into a buttered (or spray with PAM) 9 X 13 baking dish. Top with topping. Bake on 350 degrees F for 45 - 55 minutes or until lightly browned and crisp on top. Let set about ten minutes before serving. Serve warm, top with vanilla ice cream if desired.

Topping:
2 cups brown sugar
2 cups rolled oats - any kind will probably do but I use the old fashioned kind
2 sticks softened butter (room temperature is best)
1 teaspoon cinnamon (optional)
Scant pinch of salt

Mix together well, using your hands to evenly distribute the butter. Sprinkle lightly and evenly over fruit and bake as directed.
