Cherokee-style Hominy

I borrowed this recipe from a cookbook my daddy bought in a second-hand store. It's supposedly an authentic Cherokee recipe, but to tell the truth I think it's absolutely the best hominy I have ever tasted, and Cherokee or not, it's a favorite in the Deep South.

Serves 6 - 8

1 36.5-oz. can yellow or white hominy, drained
2 - 4 slices bacon
1/2 cup chopped onion
Salt & Pepper to taste

In an iron skillet, fry the bacon until done but not too crispy. Remove bacon, reserving drippings. Saute the onion in the bacon fat until it's tender, do not drain off excess grease. Crumble or cut bacon and return to pan; add the drained hominy. Salt if needed; add black pepper if you like. Fry until hot. Serve as a side dish with breakfast, lunch, or supper.
