1 pound butter - no substitutes
2 cups sugar
4 cups flour
1 teaspoon vanilla extract
2 cups chopped pecans (optional)
Mix all ingredients, blending well. Drop by the spoonful onto a cookie sheet, then flatten slightly with the bottom of a glass jar. (I use a heavy coffee mug) Bake at 350"F for about 12 minutes or until done.
They freeze well.

Butter Cookies
These taste like the Danish butter cookies you can buy in the tins but they're not stale... Surprisingly easy to make and even easier to eat!
